I love to bake but I don’t always have time to bake from scratch. So, when Aldi started carrying inexpensive Gluten Free products is was trilled; most of these products are also nut free, soy free, wheat free and lactose free. You can’t beat the price either a box of GF yellow cake mix run around $2.99
What you will need for your cupcakes:
1 box live G free yellow cake mix (yields 12 cupcakes)
3 T of peanut butter
2/3 cup unsweetened almond milk
1/2 cup oil
3 eggs
Follow the directions on the box but add the 3 tablespoons of peanut butter to your cake mix.
Now, for the Peanut Butter Frosting!
What you will need for the peanut butter frosting:
1 softened unsalted stick of butter
1 cup peanut butter
1 teaspoon of vanilla extract
3 T of unsweetened almond milk ( I add a T as I mix I like my icing thicker)
2 cups confectioners’ sugar
Place the softened butter and peanut butter into a medium bowl, and beat with an electric mixer. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 4 minutes for it to get good and fluffy.
