Today was a perfect Sophia & I went to our local CSA we support. It was so much fun picking all the vegetables ourselves and seeing how all of these amazing gifts are grown. Our garden is a little slow this year so hopefully we will be picking our own vegetables soon. Sophia, came home unloaded our box and separated all the vegetables; she was so excited and proud of herself. Tonight we decided to make tomato pie one of my favorites. Below you will find the recipe; I cheated tonight and purchased a pre-made pie crust. Enjoy!!
- 5 Tomatoes peeled and sliced thin
- 5 fresh basil eaves & 5 fresh oregano leaves, chopped
- 1 (9-inch) prebaked pie crust
- 1 cup grated cheddar cheese
- 1 cup grated pepper jack cheese
- 1 cup soy mayo
- 1 cup of green onions
Preheat oven to 350 degrees F.
Place peeled tomatoes in a strainer in 1 layer. Sprinkle with salt and allow to drain for 10 to 15 minutes. This is extremely important you will have soup not pie if you do not allow the tomatoes drain enough
Layer the tomato slices, basil, oregano and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and soy mayo together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
I allow it to cool before cutting.
